    • 2 slices of ciabatta bread
    • 2 slices of fresh mozzarella cheese
    • 1 ripe tomato, sliced
    • Handful of fresh basil leaves
    • 1 tablespoon balsamic glaze
    • 1 tablespoon olive oil

    Culinary:

    1. Preheat a panini press or grill pan.
    2. Brush one side of each slice of ciabatta with olive oil.
    3. Layer one slice of bread with mozzarella cheese, tomato slices, and basil leaves.
    4. Drizzle with balsamic glaze, then top with the second slice of bread, olive oil side up.
    5. Place the sandwich on the panini press or grill pan and cook until the bread is toasted and the cheese is melted.
    6. Remove from the heat, slice, and serve hot.

  • Vegetable Stir-Fry
  • Ingredients:

    • Assorted vegetables (bell peppers, broccoli, carrots, snap peas, etc.), sliced
    • 1 tablespoon vegetable oil
    • 2 cloves garlic, minced
    • 1 tablespoon soy sauce
    • 1 teaspoon sesame oil
    • 1/2 teaspoon ginger, grated
    • Salt and pepper to taste

    Culinary:

    1. Heat vegetable oil in a large skillet or wok over medium-high heat.

    • 1 tablespoon red wine vinegar
    • 1 teaspoon dried oregano

    1. In a large salad bowl, combine chopped cucumber, tomatoes, red onion, and Kalamata olives.

  • Vegetable Quesadillas
  • Ingredients:

    • 4 large flour tortillas
    • 1 cup shredded cheese (cheddar, Monterey Jack, or your choice)
    • 1 bell pepper, thinly sliced
    • 1/2 cup corn kernels
    • 1/2 cup black beans, drained and rinsed
    • 1/4 cup chopped cilantro
    • 1 teaspoon ground cumin
    • 1/2 teaspoon chili powder
    • Salt and pepper to taste
    • 2 tablespoons vegetable oil, for cooking

    Culinary:

    1. In a large skillet, heat vegetable oil over medium heat.
    2. Add bell pepper slices, corn kernels, and black beans to the skillet. Cook until vegetables are tender, about 5 minutes.
    3. Season with ground cumin, chili powder, salt, and pepper. Stir in chopped cilantro and remove from heat.
    4. Place one flour tortilla on a flat surface. Sprinkle shredded cheese evenly over half of the tortilla.
