- 2 medium sweet potatoes, peeled and diced

- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- Boil sweet potatoes until tender, then mash them.
- Mix mashed sweet potatoes with black beans and smoked paprika.
- Spread the mixture on half of each tortilla and sprinkle cheese on top.
- Fold the tortillas and cook in a pan with olive oil until golden on both sides.
- Coconut Curry Lentil Soup
- 1 cup red lentils
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 can coconut milk
- 2 teaspoons curry powder
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Heat olive oil in a pot and sauté onion, garlic, and ginger until fragrant.
- Add curry powder and cook for 1 minute.
- Add lentils, coconut milk, and vegetable broth. Bring to a boil, then simmer until lentils are soft.

- Baked Garlic Parmesan Zucchini
- 3 zucchinis, sliced into rounds

- Toss zucchini slices with olive oil, garlic, salt, and pepper.

- 1 can chickpeas, drained and rinsed
- 1 ripe avocado, diced

- Salt and pepper to taste
- In a bowl, combine chickpeas, avocado, red onion, lime juice, cilantro, and olive oil.
- Season with salt and pepper and gently mix.
- Peanut Butter Banana Oatmeal
- 1 cup rolled oats
- 2 cups almond milk
- 2 bananas, sliced
- 2 tablespoons peanut butter
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon cinnamon
- Bring almond milk to a boil in a pot. Add oats and simmer until cooked.
- Stir in sliced bananas, peanut butter, honey, and cinnamon.
- Cook for another 2-3 minutes, stirring constantly.
